About the Recipe

Stuffed Romaine is a great way to use up some of those spare veggies that are just sitting in the garden!


  • 1-4 stalks of romaine lettuce

  • Heirloom tomato (about 1 Large)

  • Shredded Goat and/or Sheep Cheese (sprinkle to taste)

  • Miscellaneous Microgreens (small bunch)

  • Avocado Spread (2-4 tbsp)

  • Sprigs of fennel (2-4 sprigs)


  1. Wash tomatoes and romaine

  2. Cut and rinse microgreens

  3. Place each piece of romaine on a serving plate

  4. Spread Avocado on each stalk of romaine

  5. Layer the remaining ingredients on top of each stalk and top with microgreens
