About the Recipe
Stuffed Romaine is a great way to use up some of those spare veggies that are just sitting in the garden!

Ingredients
1-4 stalks of romaine lettuce
Heirloom tomato (about 1 Large)
Shredded Goat and/or Sheep Cheese (sprinkle to taste)
Miscellaneous Microgreens (small bunch)
Avocado Spread (2-4 tbsp)
Sprigs of fennel (2-4 sprigs)
Preparation
Wash tomatoes and romaine
Cut and rinse microgreens
Place each piece of romaine on a serving plate
Spread Avocado on each stalk of romaine
Layer the remaining ingredients on top of each stalk and top with microgreens
