About the Recipe

Caprese Cucumber Bowls are so tasty you can eat them every day without tiring! It's also a great way to use up all the extra cucumbers and tomatoes in the garden.


  • 1-2 medium cucumbers

  • 1 large tomato

  • Several sprigs of basil

  • Olive Oil

  • Balsamic Vinaigrette

  • Radish Microgreens (a bunch)

  • Mozzarella Cheese


  1. Wash and peel cucumbers

  2. Cut cucumbers in half lengthwise and scoop out centers of cucumbers

  3. Wash and cut microgreens

  4. Place individual basil leaves on hollowed out cucumbers, overlapping slightly

  5. Cut mozzarella into slices and place on top of the basil

  6. Wash and slice tomato

  7. Place tomato slices on top of mozzarella, overlapping slightly

  8. Top with oil, balsamic vinaigrette, mozzarella crumbles, with some salt and pepper (to taste)

  9. Top with or serve with garnish of radish microgreens
