They are pea shoots.. what's not to love! These are grown from organic seeds!
 
One fun fact about these peas is that they are a "cut and come again" variety. As long as it is cut above the second from the bottom leaf and the soil is kept moist with some ambient light, it can produce up to two more harvests! That is up to three harvests for the price of one!
 
I love cutting these up and throwing them on salads or on top of eggs in the morning. They also taste great in a stir fry or in spring rolls.
 
These young and tender greens are perfect fcor garnishing any dish with the beautiful tendrils of the pea shoots. Pea shoots are also a great sours of vitamin A, B, C, folic acid, and carotenoids such as beta-carotene.
